Sassy Sausage Lasagna

Why have I never thought of adding sausage to my lasagna?? Thank you Food Network.com! I was inspired by their lasagna and blended their recipe with my own- it's a MUST try and it's SOO freaking easy! Fall is my FAVORITE time of year and I especially love all the cooking that comes with it. I'm so excited for baking, comforting stews and homemade everything!! This lasagna really hits the spot and tastes even better after a couple of days, once the flavors have really sat together for awhile :)

What You'll Need:
No boil lasagna (tried for the first time and loved it!)
Italian-style turkey sausage, casings removed
Onion
Sliced Mushrooms
Spinach (I used frozen)
Fresh basil
Ricotta (I use almost 32 oz.)
Shredded cheese- have fun with the varieties! (when I'm super ambitious, I grate my own)
Can of tomatoes
Seasoning... salt, pepper, garlic
2 eggs

Brown the sausage and drain, add chopped onion, mushrooms and spinach- set aside

Add spices to ricotta- red pepper, garlic, sage, salt and pepper, thyme, basil
Add 2 eggs and beat well

Spread a layer of sauce evenly on bottom of baking dish
Add a layer of pasta

Spread about 1/3 of ricotta mixture on pasta with fresh basil

Add a layer of diced tomatoes, about 1/2 the can

Add a layer of the sausage mixture.. how pretty!


Add a layer of cheese

Repeat steps as many times as will fit in the dish or until you run out of ingredients :) 
Save a little cheese and sauce for top layer!

Bake at 350ยบ for about 45 mins covered then remove foil and cook for 5 or 10 minutes, or until cheese is browned slightly

The quality of this photo is horrible but it looks and tastes amazing in real life!
