Dusty, Gristle and I headed to the Poconos this weekend for a bit of camping. In true form, we didn't arrive at the campground until well after dark, only to set up our brand new, never-before-set-up-tent- up, make a fire and cook some dinner. Luckily our new tent is super bad ass and was a breeze to assemble. After I summoned up all my girl scout training from 1995- I had a fire going in no time. We both agreed on the way up that there would be no email, blogging or business of any kind- even though the lure of the iPhone was there. Instead we limited ourselves to fb check-ins and photo updates. We had a grand time and hope to return when my Dad and brothers come to visit in two weeks!

Also, campgrounds are weird places. This campground was no exception. The sites were super small and you felt like you were practically having dinner with the neighbors.. which usually isn't a good thing. I think someone should make a mock-umentary on campgrounds.. or maybe something like the moving Waiting? Either way, they really bring some pretty fantastic characters... I especially loved the karaokee on Saturday night where children were singing Sir Mix-A-Lot's I like Big Butts... how cute

oatmeal and couscous- two of the easies and delicous things to make while camping

forget the percolator grab a french press!

lovely view, right?

I ate red meat.

mighty fine meal

yes, I packed a tablecloth from Anthro... what?

I also ate bacon.

Jime Thorpe was the cutest little town tucked away in the mountains

look closely, Gristle is sticking his tongue out! eeek!

Lake Mauch Chunk

caught cooking healthy food

roasted veggies with couscous and lentils

  1. heather, so many things i need to say.

first off, are you on instagram for the iPhone? if not, you need to be.

i think it's hilarious that you brought an anthro tablecloth. how fabulous.

healthy food while camping?! where are the chips and soda in a cooler?!

  2. Wow you guys cook some adventurous food while camping. We usually stick to burgers and dogs. I spent the first 19 years of my life in the ol' Pocono Mountains and I miss it.

  3. Haha, Jess- first off, I borrow Dusty's phone and I'm limited on how much "stuff" I can put on it, two- I know, right? three- I HAVE to eat healthier.. I had to buy bigger underwear cause my ass is getting so big! not even joking a little

Mallory- our kitchen is so teensy it was nice to cook with more room- even over a fire, ha! I loved the Poconos and can't wait to go back :)

  4. I love it that you guys had roast veggies and whole grains. Case and I went camping in the Redwoods two weeks ago and we thought we were being so healthy and rad by bringing whole grain pasta and fresh tomato sauce. We are not worthy. See you soooooooon!!!
